Saltfish Fritters

These are savory, slightly salty, and perfect as a snack or breakfast treat.

Ingredients:

  • 1 cup saltfish (salted cod), soaked overnight or boiled to remove excess salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (optional, taste first because saltfish is salty)
  • 1/2 teaspoon paprika (optional, for color and flavor)
  • 1 small onion, finely chopped
  • 2 scallions, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1 Scotch bonnet pepper, finely chopped (optional, for heat)
  • 1/4 cup fresh parsley, chopped
  • 1 egg, beaten
  • About 1/2 cup water (adjust for batter consistency)
  • Oil for frying (vegetable or canola oil)

Instructions:

  1. Prepare the Saltfish:
    • Rinse the saltfish, then boil in water for 15–20 minutes to remove excess salt.
    • Drain and flake into small pieces, removing bones and skin.
  2. Make the Batter:
    • In a large bowl, mix the flour, baking powder, black pepper, and paprika.
    • Stir in the chopped onion, scallions, bell pepper, Scotch bonnet, parsley, and flaked saltfish.
    • Add the beaten egg and slowly mix in water until you get a thick but scoopable batter.
  3. Heat the Oil:
    • In a frying pan, heat oil over medium heat (enough to cover the bottom of the pan).
  4. Fry the Fritters:
    • Using a spoon, scoop small amounts of batter into the hot oil.
    • Flatten slightly and fry until golden brown on each side, about 2–3 minutes per side.
    • Remove and drain on paper towels.
  5. Serve:
    • Serve warm as a snack or breakfast. Delicious with dipping sauce or a side of avocado.

💡 Tips:

  • If your batter is too thick, add a little more water, a tablespoon at a time.
  • For extra flavor, you can add a pinch of nutmeg or thyme to the batter.
  • You can make mini fritters for bite-size snacks—perfect for parties.
