These are savory, slightly salty, and perfect as a snack or breakfast treat.
Ingredients:
- 1 cup saltfish (salted cod), soaked overnight or boiled to remove excess salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (optional, taste first because saltfish is salty)
- 1/2 teaspoon paprika (optional, for color and flavor)
- 1 small onion, finely chopped
- 2 scallions, finely chopped
- 1 small red bell pepper, finely chopped
- 1 Scotch bonnet pepper, finely chopped (optional, for heat)
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- About 1/2 cup water (adjust for batter consistency)
- Oil for frying (vegetable or canola oil)
Instructions:
- Prepare the Saltfish:
- Rinse the saltfish, then boil in water for 15–20 minutes to remove excess salt.
- Drain and flake into small pieces, removing bones and skin.
- Make the Batter:
- In a large bowl, mix the flour, baking powder, black pepper, and paprika.
- Stir in the chopped onion, scallions, bell pepper, Scotch bonnet, parsley, and flaked saltfish.
- Add the beaten egg and slowly mix in water until you get a thick but scoopable batter.
- Heat the Oil:
- In a frying pan, heat oil over medium heat (enough to cover the bottom of the pan).
- Fry the Fritters:
- Using a spoon, scoop small amounts of batter into the hot oil.
- Flatten slightly and fry until golden brown on each side, about 2–3 minutes per side.
- Remove and drain on paper towels.
- Serve:
- Serve warm as a snack or breakfast. Delicious with dipping sauce or a side of avocado.
💡 Tips:
- If your batter is too thick, add a little more water, a tablespoon at a time.
- For extra flavor, you can add a pinch of nutmeg or thyme to the batter.
- You can make mini fritters for bite-size snacks—perfect for parties.
